'Coursed' stone masonry means that the placement of the stones in the structure have been pre-decidedly placed in rows according to their size and shape. All of the rocks of the same size are placed in the same row or area of the structure, whether that be at the bottom, middle, or top of the structure. Each variation of rock size and shape would be seen as a different course in the construction. The result is a more organized look with consistency in the placement of different size stones as well as the size of the joints between stones.
'Uncoursed' stone masonry means that the placement of each stone was not planned to be placed in rows according to their size and shape. Stones are placed randomly as the building develops. However, usually larger stones are placed at the bottom of the structure and any gaps between stones is filled with smaller stones or mortar. The result is a more random look with inconsistency in the placement of different sized stones as well as the size of the joints between the stones.
